Wine Finishing Processes
For dry wine, a temperature of -5°C is often targeted, with a normal residual sugar content of 102 grams per liter. This relates to the sugar levels.
Racking (Transegar): This involves transferring wine from one vat to another after settling.
White wines typically undergo less fermentation or malolactic fermentation before sulfiting.
After fermentation, a deposit is left, and fining begins. Common fining agents include blood powder and bentonite (a clay that attracts solid particles). This is followed by a resting period.
Once clarified, the wine is transferred to another tank for stabilization, which is a physicochemical process. Wine undergoes cold stabilization at low temperatures, typically 0°C. For a 12% alcohol wine, the target temperature would be calculated as half minus one (e.g., 12/2 - 1 = 5°C). Biological stabilization is achieved through filtration. The wine is then ready for bottling.
White Wine Aging and Classifications
White wines are aged in high-quality barrels. Precise acidity and aging time are governed by specific decrees. A recommended white wine is Viña Esmeralda.
Aging classifications for white wines:
- Aging: 24 months total (with a minimum of 6 months in cask)
- Reserves: 24 months total (with a minimum of 6 months in barrel)
- Gran Reserva: 60 months total (with a minimum of 6 months in barrel)
Wine Grape Varieties and Aromatics
Grape varieties are categorized by their aromatic profiles:
- Very Aromatic: Muscat, Gewürztraminer
- Aromatic: Albariño, Treixadura, Loureiro, Parellada
- With Distinct Aromas: Macabeo, Xarel·lo, Malvasia, Verdejo
- Low Aromatic: Airén, Merseguera, Alcañón, Pedro Ximénez
- Slightly Aromatic: Cayetana, Palomino Fino
Rosé Wine Production and Characteristics
Rosé wine is classified as a still wine. It is made similarly to white wine, but from red grapes. Rosé wine is extensively produced in La Mancha and Navarra. These wines undergo a quick maceration process. Rosé wine pairs well (marida) with various dishes, and a significant amount is exported.
Red Wine Production: Maceration & Color
Maceration: This process contributes to the wine's color, supports yeast activity, and builds body due to the presence of polyphenols, which are natural antioxidants.
Color Development:
- Tannins: Contribute to yellow and red hues, accumulating over time.
- Anthocyanins: Provide a range of blues and accumulate to create purple hues.
Wine's health benefits are primarily attributed to its polyphenols.
Grape Harvest and Initial Winemaking Steps
Upon arrival, grapes undergo destemming and crushing. Different grape varieties are vinified separately. This separation is crucial for producing young wines versus those intended for aging (crianza).
Sulfites: Their primary function is antiseptic, preventing oxidation and sometimes affecting color.
Vatting (Encube): This step involves placing the grape must and skins into the fermentation tank.
Fermentation Tanks and Wine Processing
Stainless steel tanks are commonly used for wine production. These tanks are equipped with a cooling system and often feature an auto-emptying mechanism.
Fermentation: This crucial process occurs in these tanks, where sugars are transformed by yeast, producing alcohol and carbon dioxide (CO2).
During fermentation, the grape skins form a 'cap' on the surface. To ensure proper extraction and mixing, techniques like pumping over (watering the cap) and punching down (Bazuqueo), which involves using poles to submerge and mix the skins, are employed. This is where maceration occurs.
Tumultuous fermentation involves continuous pumping over, punching down, and maceration, with temperatures reaching up to 30°C.
- Young Wines: Typically ferment for 6-7 days.
- Aged Wines: Develop more body and acidity.
When the winemaker deems the fermentation complete, the wine undergoes Devatting (DeCubas), separating the wine from the pulp, followed by racking. The first run-off, known as free-run wine, is collected.
Pressing: The first, gentle press is typically used for wines destined for aging. Later presses yield different qualities of wine, often referred to as 'press wine'.
The wine is then decanted to other tanks, where fermentation typically finishes within 3 weeks.
