Stages of the Maillard Reaction
As the reaction takes place: The development of the reaction involves the following sequence of reactions:
- Maillard condensation: This is the first reaction that takes place and involves the condensation of a free carbonyl group and an amino group.
- Degradation of ketosamines: Once formed, ketosamines break through a network of complex reactions leading to various compounds. From reductones, they can be formed by the reaction of secondary amine compounds. These are susceptible to polymerization and can suffer divisions leading to the formation of ketones, aldehydes, and volatile acids that contribute to taste and aroma.
- Strecker degradation: This occurs when a compound with alpha-dicarbonyl reacts with amino acids. Their degradation occurs when foods are heated to high temperatures.
Drawbacks of the Maillard Reaction
A significant drawback of the Maillard reaction is that it results in a drop in food value. This implies the destruction of basic amino acids, such as lysine, and the loss of vitamins like vitamin K and ascorbic acid, which is important.
Why Control Non-Enzymatic Browning?
- In many foods, the color and aroma that occur are desirable, while in others, it is undesirable. Color changes can lead to product rejection because it is aesthetically unpleasing.
- Avoiding non-enzymatic browning is desirable to keep the nutritional value of food intact.
- It helps prevent the presence of potentially mutagenic compounds.
Cellulose Plasticity and Water Absence
Why does the absence of water make cellulose fibers less plastic? In the absence of water, it will gradually become clear, making it responsible for the decrease in plasticity observed in foods that contain cellulose and are subjected to drying.
Soluble and Insoluble Dietary Fiber
Soluble Fiber
- This is the fraction fermented in the colon, resulting in methane, hydrogen, carbonic anhydride, and short-chain fatty acids that are metabolized.
- It is found in gums, pectins, polysaccharides, and principally soluble reserve hemicelluloses.
- Its associated physiological effects include decreasing blood cholesterol and controlling glucose levels.
Insoluble Fiber
- This group hardly suffers fermentation in the colon. It includes some fractions of cellulose and hemicellulose.
- It is responsible for the beneficial effect of fiber on intestinal motility.
