Definition of Dietary Fiber

Dietary fiber is a residue that reaches the colon without being digested by endogenous secretions of the human digestive tract. It is a complex group of materials with different chemical structures, characterized mainly by its resistance to the action of human digestive enzymes. It is composed of cellulose, hemicellulose, lignin, resistant starch, gums, mucilages, other polysaccharides (alginate and pectin), and certain oligosaccharides and monosaccharides.

Physiological Effects of Fiber

  1. Water Retention

    Fiber retains water through polysaccharide binding or inclusion within its structure.

    • Accelerates intestinal transit, preventing constipation.
    • Decreases intestinal contact time, which helps prevent colon cancer.
  2. Anaerobic Fermentation

    • Gases (water, carbon dioxide, and methane) increase fecal bulk, preventing constipation.
    • Short-chain fatty acids provide energy and maintain the epithelium of the colon.
  3. Bile Acid Excretion

    Fiber increases the adsorption and excretion of bile acids while decreasing their reabsorption phase. This increases the liver's demand for cholesterol for bile acid synthesis, thereby reducing blood cholesterol levels. This action prevents and improves cardiovascular disease.

  4. Intestinal Absorption Modulation

    • Fiber increases viscosity, leading to decreased absorption of glucose, which is beneficial in managing diabetes and obesity.
    • It can cause decreased absorption of certain nutrients, such as iron, which may be detrimental in cases of anemia.
